STEP 9: Cooling your Cakes …the right way
Once you take the cake pans out from the oven move them to gridded racks . This allows air to circulate around the cake pan, cooling it evenly. Allow the cake to cool for at least 15 minutes in the pan and then invert it onto the cooling rack and leave for another 15-30 minutes until cool to the touch. Do not leave your cake sitting out longer as it will loose its moisture. Angel cakes and chiffon cakes need to be cooled upside down in the pan so they don’t deflate. For sheet cakes, sprinkle some sugar on top and invert it onto a flat board (or onto another inverted sheet pan with the bottom side up) and peel off parchment paper.
