CAKE BAKING 101: (Part 3) 10 steps to Succeed in Baking
Successful baking is an event series which starts with quality ingredients and ends with proper cooling and storage. What is a perfect cake? To me, a cake that is tender, moist and evenly baked with no doming, cracks, heavy crusts or big tunnels is a perfect cake
STEP 1: Quality of Ingredients
The Quality of ingredients determine the quality of baked goods. Read and compare brand reviews online and buy products that best suit your baking needs. Make sure your ingredients are fresh with a good shelf life. Store your dry ingredients in a glass or plastic airtight container in an odor free cabinet. If you live in a humid environment store dry products such as flour, milk powder etc. in the refrigerator/freezer as this will prevent clumping. Leavening agents like baking powder and baking soda if not used in a long time need to be tested before use. Make sure ingredients are used fresh within the date of expiry – remember what goes in first comes out first. Read more on basic ingredients, their role in baking and their storage here.
