CAKE BAKING 101: (Part 3) 10 steps to Succeed in Baking




STEP 5: Combining Dry with Wet ingredients DSC01804

Add your ingredients in the right order. First mix your eggs with fat, flavoring and other liquid components in medium speed (setting 4-6 in the Kitchen Aid) for 30-60 s. Then reduce the setting to the lowest speed (Speed 2 on the Kitchen Aid) and add dry ingredient mix, one cup at a time. Once the dry and wet ingredients combine a chemical reaction is triggered in which flour protein becomes gluten. Gluten is important for building the structure of the cake, but too much mixing results in high gluten formation, giving dense chewy cakes. Tenderness is therefore lost with extensive mixing. I keep my mixing time to two minutes or less.
