1. RECIPES- CAKE, FILLING, AND FROSTING

SONY DSC

8 inch Chocolate Cake Layers

  • For the Cake, I used my Dark Chocolate Cake Recipe (click for recipe)
  • For the FrostingI used American Buttercream Recipe (This recipe is attached to the white vanilla cake). American Buttercream is my first choice of buttercream when it comes to piping 3-dimensionalal designs. It holds stiff and has a “crusting” effect which makes it easier to pipe and set. I like this combination as the American buttercream even though super sweet is easily complemented by the chocolate cake!
  • For the Filling, I used this delicious homemade Strawberry Jam.Jam-2

Love the tartness of this preserve, it gives a great balance to taste in cakes that are extra sweet.

Tip– As your cake is Baking ( my baking time is 45 minutes) start making your buttercream frosting and clean up any mess, do your dishes 😉 This is a good time to get your equipment like piping tips , piping bags, gel colors and, spatulas, turntable etc ready and organized.

STEP 2: Filling and Stacking

Wow.. I was waiting from a long time for Crumb coating, Icing and decoration article from you. Though I bake cakes which are tasty, I don’t decorate them because I have very less confidence about Icing and even coating. This post is clearly explained and gives me much need confidence. Thanks a lot Thula!!

Ombre rosettes definitely lifts up the confidence of a novice person and it looks elegant too.. I have tried it with whipped cream and like you said its easy and gets better with practice. Will try with buttercream too..
Let me tell you Thula I definitely envy those who are lucky enough to taste these yummy cakes of yours.
